    ...rib tips vs hot links

    ... originally, I went to Ribs 'n' Bibs to order the rib tips... I went a total of 3 times to give them a chance... I did not like the tips at all... They were dry and tough, all 3 times... I am not a fan of their sauce either, although I know that southerners like the sauce on the "sour" side (more vinegary than sweet).. I like my sauce sweet, but that would not have been a problem if the food was good because I can always substitute the sauce... That being said, I was on a mission to find something that I liked here, so for my 4th visit, I tried the hot links.... They were absolutely delicious!.... they are not served whole, but instead each link is sliced in half and they are very tender... I will go back to get some more of these... I haven't tried the chicken, that is on my to do list... the 4.0 is for the hot links... 2.0 for atmosphere because when I went the owner was there and had an attitude; I gave the service an over-all 3.5 because I think that customer service could have been better... "it doesn't hurt to smile"... Overall, I would recommend Ribs -n- Bibs... but not for the ribs... "the hot links rock!!!!"

    good food

    the food is very good but the bread should be put on top of the food. putting it on the bottom the heat and sauce turn the bread into mush. good food and sauce but you need the bread on top of the food.

    happy neighbor

    When I moved to Hyde Park to attend Grad School, the smell of Rib's and Bib's (which you can catch a quarter mile up 53rd St) was a savory welcome to the neighborhood. I have never been disappointed, and disagree strongly with prior reviews claiming inconsistent food. While their sandwiches are good, the Ribs and Tips are the best item on the menu. My wife and I are more than satisfied sharing a Rib Tip dinner, which is less than $12.00, and when friends are over, the Bucket of Tips goes a very long way. The people are great, and happy to fill your order with no sauce, extra sauce, or even sauce on the fries. If you want good take out in Hyde Park, Ribs and Bibs is for you.

    Ribs vs. sandwiches

    Surprisingly, the ribs at Ribs 'n' Bibs are the weakest item on the menu. I find the Gunslinger sandwich well-spiced (as well as a great deal, compared to the relatively overpriced ribs). The pulled pork sandwich is also great with just a touch of sourness from the vinegar and slathered with sauce, the pork tender and juicy. The ribs tend to have a more smoked flavor rather than bringing out the actual flavor of the meat. A full slab is also much more than what it should be, considering Hyde Park prices and rib places nearby. Overall, the ribs and fries are the weakest items they put out, the sandwiches being the best.

    Texas Burger

    I always order the Texas Burger, with sauce on the burger. It is so delicious. I once shocked a vegan when I told her I like the Texas Burger because in some way it reminds me of my favorite veggie burger but if you are a true meat lover you will like it too. My only complaint is that the buns are too small for the Texas size burger, but the owner told me that way you get to the meat straightaway, which I guess is true!

    Great BBQ

    As the other reviewer mentioned, it's a take-out joint, so the service and atmosphere are irrelevant to the goodness that is Ribs 'n' Bibs. While the quality of their food does indeed vary a bit, it errs on the side of being fantastic. The BBQ is quite smokey and delicious, and when the meat's done right, it just peels off really well.

    take out ribs

    Ribs & Bibs is a take out joint so ratings for service and atmosphere are kind of irrelevant. The quality of the food is pretty inconsistent and highly variable. This is unfortunate because when it's good the ribs are some of the best I've had.
